Menakao 100% Cocoa

Obviously 100% dark chocolate isn't one that beginners should start off with. But if you're comfortable with very bitter chocolate then this has to be one of the best you could try. If you allow yourself to melt it slowly on the tongue you can find lovely flavour and textures.

Hotel Chocolat 100% Hacienda iara

Chocolate at this sort of level just isn't for me, you might like it, but ... well nothing really. I wonder how much Hotel Chocolat actually sell of it?

Patrick Roger 100% Dark Chocolate

I don't think I'd hunt out the Patrick Roger 100% bar again. It may not be as bitter as the Michel Cluizel Noir Infini 99%, but it still doesn't offer enough flavour for my liking.
