There are many features of the chocolate that Francois Pralus creates that I just love. Not only can you take a chocolate-based journey around the world by ‘visiting’ the various countries that Pralus source their single origin beans from such as Venezuala, Trinidad, Tanzania, Sao Tome, Papua New Guinea, Madagascar, Indonesia, Ghana, Ecuador, Jakarta, Cuba, Colombia, Brazil and Domnican Republic, but not forgetting the small village of Chuao which is my most favourite dark chocolate bar I’ve tasted to date. Pralus create fine dark chocolate with a wonderful array of flavours and characteristics. The Chuao has a delightful burned brownie flavour whilst the Brazil is fantastically acidic. There aren’t many mild bars there too try. I’d suggest you try some of the Valrhona bars instead.

Pralus 75% Vanuatu

This Pralus 75% Vanuatu dark chocolate was predominantly one that tasted of gingerbread with the occasional hint of orange. I loved that its from a different origin, but I'll have to try more from their before I make my mind up.

Pralus Caracas 75%

I've got to say that this Pralus Caracas 75% isn't anywhere near as good as their previous bars. It uses Venezuelan cacao along with some from Ghana - which I don't think does it any credit.

Pralus Cuba 75% Dark Chocolate

I was hoping for so much more from Pralus with this 75% bar made with Cuban cacao. But alas it was very muted and left me wanting more acidity. If you are looking for a mild dark chocolate bar with less cocoa butter then try this one.

Pralus Barre Infernale Lait

The Pralus Barre Infernale Lait was an incredible bar of milk chocolate, even if it was adulterated by nuts.

Pralus Chuao 75%

This Pralus Chauo Bar is the best dark bar I've ever tasted - and should be tried if you ever get the chance.

Pralus Indonesie 75% Cocoa Single Origin Dark Chocolate Bar

The Pralus Indonesie is a very good bitter dark chocolate bar, but I fear not their best.

Pralus Tanzanie Dark Chocolate

Pralus Tanzanie (Tanzania) is a great bar of chocolate that has a wide variety of notes that all add to a fantastic flavour.

Pralus Trinidad 75% Dark Chocolate

The Pralus Trinidad 75% Dark Chocolate is a wonderful chocolate bar and is up to the standard that Pralus sets.
