Pralus create fine dark chocolate with a wonderful array of flavours and characteristics. The Chuao has a delightful burned brownie flavour whilst the Brazil is fantastically acidic. There aren’t many mild bars there too try. I’d suggest you try some of the Valrhona bars instead.
