Some really good stuff does come out of Indonesia these days and companies such as Artisan du Chocolat, Pierre Marcolini and Pralus have produced some wonderful chocolate made with cocoa originating from the islands.
Although this bar from Pierre Marcolini isn't from an unusual source, it comes across as a fairly rustic bar of dark chocolate more akin to a chocolate maker that doesn't use soya lecithin.
There's just something fantastic with what Artisan du Chocolat are doing these days when they source cacao from destinations the less adventurous chocolate makers can't be bothered to explore. The flavour of this Bali bar was incredibly interesting.
Willie's Delectable Cacao has created the Indonesian 69% Dark Chocolate bar which to my mind is fascinating, but does miss the mark because its a little too dry at the end.
